Question:
Is it only recommended to recite dua qunut in the witr prayer or can one keep reciting duas from the Quran and Sunnah after dua qunut?

Answer:
One can recite other duas in the Qunoot.
Imam Kasani RA in his Badai Al Sanai has mentioned:
After reciting the prevalent Du’aa Qunoot, it is best for one to recite the following, which was taught to Hassan (Ra) by the Messsenger of Allah ﷺ (Badai Al Sanai, Vol 2, Pg 233):
اللَّهُمَّ اهْدِنِي فِيمَنْ هَدَيْتَ وَعَافِنِي فِيمَنْ عَافَيْتَ وَتَوَلَّنِي فِيمَنْ تَوَلَّيْتَ وَبَارِكْ لِي فِيمَا أَعْطَيْتَ وَقِنِي شَرَّ مَا قَضَيْتَ إِنَّكَ تَقْضِي وَلاَ يُقْضَى عَلَيْكَ وَإِنَّهُ لاَ يَذِلُّ مَنْ وَالَيْتَ وَلاَ يَعِزُّ مَنْ عَادَيْتَ تَبَارَكْتَ رَبَّنَا وَتَعَالَيْتَ
Note: The full Du’aa was taken from Abu Dawood (1425)
فالأولى أن يقرأه و لو قرأ غيره جاز و لو قرأ معه غيره حسنا و الأولى أن يقرأ بعده ما علّم رسول اللّه ﷺ الحسن بن على رضي اللّه عنهما في قنوته ))اللّهُمَّ اهْدِنَا فِيمَنْ هَدَيْتَ(( إلى آخره
